Meryl is an experienced RN and trainer with a Master’s degree in Nursing and certificates in Project Management, Plant-Based Nutrition, and Plant-Based Cuisine. A lifelong learner and transformational leader, she brings decades of experience in health, organizational change, and meditation to her passion for whole food, plant-based eating. Meryl is dedicated to sharing the WFPB health message with love, acceptance, and impact.

Michelle Saletan

Institutional Support Manager at Balanced

Michelle Saletan is the Institutional Support Manager at Balanced, where she partners with schools nationwide to expand plant-based meals. With more than a decade of experience in school nutrition at both the school and district levels, she has guided menu development, procurement, and staff training for districts of all sizes. Michelle earned her B.A. from Fordham University and is recognized for building collaborative partnerships that make plant-forward meals available and appealing to students.

Olivia Rother

Community Engagement Support Specialist at Balanced

Olivia supports school nutrition teams in engaging their communities during menu changes, with a focus on taste testing, marketing, and student involvement. She is a strong advocate for access to food that is health-supportive, sustainable, and delicious. Olivia earned her B.S. in Exercise and Nutrition Sciences from The George Washington University Milken Institute of Public Health and brings experience in advocacy, nutrition education, and farm-to-school work.

Whitney Swoboda

Institutional Support Coordinator at Balanced

Whitney Swoboda is the Institutional Support Coordinator at Balanced. A former special educator in Baltimore, she saw firsthand the life-changing potential of school meal programs, an experience that now drives her work to create inclusive, school-based solutions to nutrition insecurity. Whitney earned her B.S. in Communications from Boston University and is passionate about empowering young people to make healthy food choices and using narrative to inspire change.

About More Plants on Plates

More Plants on Plates is now a collaborative project between Balanced and Plant Based Nutrition Movement.

Following a successful public awareness campaign called More Plants on Plates in Illinois, Balanced and Plant Based Nutrition Movement joined forces to ensure school food service teams across the country have the support and resources they need to bring more plant-based meals to their menus and families have the information they need to access them.

Together, we're raising awareness about the benefits of incorporating more plant-based meals into school menus, and providing the hands-on technical assistance, resources, and support food service teams need to make it happen. Our shared mission is to empower schools to serve meals that fuel student health, protect the planet, and create a lasting culture of nutritious, delicious choices.

More Plants on Plates offers a library of free, ready-to-use materials and resources to help school food service teams bring more plant-based meals to their menus. Find those materials here.

For School Nutrition Teams looking for deeper support, we offer a comprehensive six-month training program that includes monthly webinars, personalized 1:1 guidance, peer-to-peer community building, and microgrants to fund plant-based initiatives in schools. Click here to learn more and express interest. Applications for the next round open in November 2025.

In addition to supporting food service teams, More Plants on Plates also works to inform and engage students and parents about the availability of plant-based lunches. Families often want to know how their children can access these meals, and we are committed to making sure information is clear, accessible, and easy to find both in schools and in the community.
